Abstract
    The alpha-amylase activity in the proximal section of the midgut (included the pancreas) was determined for rainbow trout (Salmo gairdneri) raised on three semi-synthetic diets containing 40, 28, and 0% of cornstarch for periods of 4 and 8 weeks. The amylase activity increased with dietary cornstarch. The bacterial load in the alimentary tract and relative amylase- producing bacteria did not show significant differences between the three diets. Moreover, the histological examination carried out on the stomach, pyloric caeca, intercaecal pancreatic tissue, intestine, and liver did not show any deleterious effect with the 40% carbohydrate diet, whereas the group fed with 12% of crude fibre showed ductal cell changes of the pancreas. The results of this study indicate that rainbow trout have the ability to adapt to elevated cornstarch levels in their diets
