Abstract
    The Mediterranean mussel (Mytilus galloprovincialis) is a widely cultivated species in many countries. It is important to estimate the optimal harvest time when rearing this mollusk. The aims of the study are to: evaluate the quality of the mussel M. galloprovincialis products from marine farms located in coastal waters of the Crimean Peninsula; identify factors affecting the meat content of mussels; determine the most favorable water area for cultivation and the most favorable harvest seasons in each farm. The maximum mean value of the meat yield index was noted on the “Outer Roadstead” farm (20 ± 1.4%). The “Donuzlav” and “Katsiveli” farms exhibited meat content indices of 16.2 ± 1.2% and 15.4 ± 1.4%, respectively. The most favorable seasons for collecting mussels with the highest meat yield index were noted: for “Donuzlav” it was May, June and August; for “Katsiveli” it was June, July and September; and for “Outer Roadstead” it was February, March, April and July. The quality assessment of mussel production was influenced by the location of the mussel farms, water temperature, food availability, sex ratio, and the stage of gametogenesis. The results obtained and the developed approach have the potential to assist sea farm managers in optimising mussel production and ensuring the sustainability of mariculture along the Black Sea coast and in other boreal waters.
